Welcome May! How to do a simple orange – carrot cake?

Simply delicious carrot cake with “Between Healthy and Tasty”?!  

Who likes light spring cake?

How about a light carrot cake?

Trivial? If  I say it will be an orange carrot cake with walnuts?

Recommendable! The perfect cake with the afternoon tea  or what I love – cold water with orange and fresh mint .

Carrot cake with orange perfectly fits with “Between Healthy and Tasty”! I love desserts. Cakes, cookies, chocolate, ice cream… Dessert in every form is perfect! However, I am looking for healthy solutions for me and my family. Dessert does not always mean a lot of sugar and fat. Healthy and tasty desserts is something for me 🙂 I can not say no!

List what we need:

  • 2 eggs
  • 3 tbsp cane sugar (you can substitute coconut palm sugar)
  • 1/4 lb of melted butter
  • 5 oz buttermilk or kafir
  • squeezed juice of one orange, will be about 5 oz juice
  • 1.5 to 2 cup grated carrots
  • 2 tbsp chopped walnuts
  • 50 lb whole wheat flour
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg (you can skip if you do not like)
  • 1 tsp of baking powder

How to do:

Let’s start everything from the preparation of products, so later will be easily to added.

Set the oven to 255 degrees.

  1. We will need two bowls. In one we sift flour by a sieve + baking powder + cinnamon +nutmeg if you like (I love that delicately spicy taste). After sifting gently with spoon.
  2. Then, very slowly melt the butter.
  3. In the meantime, we can squeeze the juice of one orange and grated rind of half orange and cut our walnuts and measure buttermilk or kefir.
  4. Carrot rubs on the coarse mesh grater 1.5 – 2 cup
  5. Prepare a loaf pan, put into the baking paper.
  6. All ready to mix, prepare the second bowl, mix the eggs with sugar and melted butter. Mix for 5 minutes.
  7. Slowly add buttermilk / kefir and the juice of one orange and the grated rind of half orange.
  8. Add grated carrot – mix  and add the sifted flour with baking powder, cinnamon and nutmeg – gently mix all pastry.
  9. Decant the pastry do a loaf pan with the baking paper.

Bake for 50 – 60 minutes to the so-called. dry stick.

Tips:

When you grate the rind of orange, watch to don not go to white part because will give very bitter flavor.

On the top of the cake I sprinkle with grated almonds.
